Easy Pumpkin Pie

The traditional pumpkin pie is always great but here is a simple recipe for the kids to enjoy making:

1 (15 ounce) can pumpkin
1 (14 ounce) can EAGLE BRAND® Sweetened Condensed Milk
2 large eggs
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1 (9 inch) unbaked pie crust

1. Preheat oven to 425 degrees F. Whisk pumpkin, sweetened condensed milk, eggs, spices and salt in medium bowl until smooth. Pour into crust. Bake 15 minutes.


2. Reduce oven temperature to 350 degrees F and continue baking 35 to 40 minutes or until knife inserted 1 inch from crust comes out clean. Cool. Garnish as desired. Store leftovers covered in refrigerator

Granola Bars

2 cups granola
2 eggs
1/2 cup unsweetened applesauce
Preheat oven to 350°F.
Beat eggs into applesauce and combine with granola.
Press into an oiled or buttered 8-inch square pan.
Bake for 20 minutes.


Banana Nuggets

1 banana sliced
1/2 cup rice krispies or corn flakes
1-2 Tbsp Peanut butter
Microwave peanut butter till semi-liquidy.
Dip banana slices in the peanut butter and coat with cereal.
Refrigerate until peanut butter has thickened.

Note: You could do lots of variations on this recipe, try mini M&M's, coconut, raisins, dried cranberries, ect.


Kid's Snackin' Corn

9 c Corn, popped
1/3 c Peanut butter
1 tb Butter or margarine

1. Pop the corn.

2. Over low heat melt the butter or margarine with peanut butter until runny. Drizzle over the
popcorn and mix well.

3. Spread in shallow baking pans and bake in a 375 degree oven for 10 minutes, stirring 2 or 3 times. The corn will crisp and topping will set.


Zippy Ziti

1 1/2 cups ziti or any uncooked noodles
3/4 cup milk
3 tablespoons butter
1 1/2 cups grated sharp cheddar cheese

1. Cook the noodles according to the package directions, drain.
2. Add the rest of the ingredients to the noodles, and put into a two-quart casserole dish.
3. Bake at 350 degrees for 35 minutes.
